Be Healthy with Celery
Celery should look crisp and snap easily when pulled apart. Stalks should not splay out. It should be relatively tight and compact.
- Celery is an excellent source of vitamin C, a vitamin that supports the immune system. More than 20 scientific studies have found vitamin C to be a cold-fighter, reducing cold symptoms or severity.
- Celery contains active compounds which help relax muscles around arteries and allow the blood vessels to dilate. Blood can flow at a lower pressure because there is more space inside the arteries.
- Celery has been considered a high-sodium vegetable, and blood pressure reduction is usually associated with low-sodium foods. The amount of sodium delivered by celery is 100 milligrams per cup (about two stalks) or 1/24th the 2,400 milligram daily value for sodium. This is only 4% of the sodium value.
- Celery's cholesterol-lowering activity has been demonstrated in studies of animals.
- Celery, rich in both potassium and sodium, the minerals most important for regulating fluid balance, stimulates urine production, proving a modern explanation for the ancient use of wild celery seeds as a diuretic.
- Compounds called coumarins are found in celery. They help prevent free radicals from damaging cells, decreasing mutations that up the chances for cells to become cancerous.
- Compounds in celery called acetylenics have been shown to stop the growth of tumor cells.
